Recently I stumbled across the brand Kite Hill at Whole Foods. They sell every dairy-free, nut based version of cheese, from ricotta, to cream cheese, to artisanal cheeses. I created this yummy starch-free Italian dinner, as a light alternative to our usual Sunday dishes, inspired by this recipe.

1 Scoop Vegan Chocolate Shakeology

1 frozen Banana, sliced into chunks

1/4 Cup Unsweetened Vanilla Almond Milk

1 Tbsp Vanilla Bean Espresso Almond Butter

Place almond milk, banana, shakeology, and almond butter in blender or food processor and blend until smooth. Top with your favorite nuts or coconut shreds.

Shakeology nixes a lot of my sweets cravings, but this refreshing “dessert” is actually packed with health benefits. Chia seeds are high in antioxidants, protein, omega 3’s, dietary fiber and vitamins and minerals. This means they help with keeping skin looking young, aid in digestive health, promote heart health, boost your metabolism, and promote muscle building and weight loss.

It makes a great “treat” for breakfast, snack or dessert, and fits into the 21 Day Fix meal plan. How cute are these footed dessert dishes?

21 Day Fix Approved Chia Seed Pudding

4 oz Unsweetened Vanilla Almond Milk

2 Tbsp Chia Seeds

1 Tbsp Rolled Oats

1 Drop Vanilla Creme Stevia (optional)

Mango, Strawberries, Blueberries (or fruit of choice)

Add chia seeds, oats, almond milk, and stevia (optional) to bowl. Mix well. Let sit overnight (for best consistency.) Add fresh or frozen fruit of choice. Enjoy!

1 Orange | 1 Yellow | 1 Purple (depending on the amount of fruit added)

A lot has happened since my last post. I took my passion of sharing recipes, nutrition and fitness and became a health and fitness coach, we moved into a new house, and I got married! Detox Lemonade

  • 3 Lemons
  • 10 Shakes Cayenne Pepper
  • 1 Packet SweetLeaf Stevia
  • 1 Pitcher Purified Water

Slice one lemon, thinly and add to pitcher. Cut the remaining two lemons in half and squeeze juice from all four pieces into pitcher. Add packet of Stevia, and Cayenne Pepper. Fill pitcher with water. Refrigerate.  Enjoy 🙂

I’ve been traveling excessively lately, and I’m always trying to come up with innovative recipes to stick with clean eating, but also store well. I whipped together a guilt-free green goddess bowl, sans oil, yet loaded with nutrients and flavor.

Green Goddess Bowl Ingredients

    • Kale
    • Peas
    • Zucchini
    • Tomatoes
    • Hemp Seeds
    • Flax Seeds
    • Pumpkin Seeds
    • Apple Cider Vinegar
    • Lemon
    • Cilantro
    • Basil
    • Parsley
    • Nutritional Yeast

      • Steam kale and peas. When I’m in a rush, a microwavable steamer works really well. I buy organic frozen peas, they’re are a great quick dinner staple.

      • Dice zucchini tomatoes. Mix in large mixing bowl with kale and peas.

      • Add hemp seeds, flax seeds, pumpkin seeds, spices, and nutritional yeast to taste.
      • Drizzle with fresh lemon and apple cider vinegar and mix well. Can be served hot or cold for an easy Summer go to. Enjoy!

Friday Finds

  1. The Best Makeup Brush Cleaner Ever. – I was in search of an innovative way to clean makeup brushes, that even by using department store brush cleaner, won’t come clean. I found this recipe on Pinterest, but I didn’t have tea tree oil, so I changed it around a bit. It makes your makeup brushes look brand new in seconds! Just swirl brush around in the cup with mixed ingredients. Rinse with hot, then cold water, pat dry excess water & let dry brush side up in a cup.
  2. Diptyque ‘Baies’ Scented Candle – This candle is so relaxing and refreshing! It just smells pretty. A new nightstand staple.
  3. ShoeMint Hillary Flats – Pointed toe & a bow are one of my favorite combinations right now! So cute.
  4. Antioxidant Superfood Smoothie – I’m obsessed with making smoothies with my favorite superfoods. Usually my mid-morning pick me up.
  5. Cozy Sleek – Can’t get enough of OP’s urban chic plaid.

 

Broiled Grapefruit

If you aren’t a fan of grapefruit, after trying this recipe you might just become one. I love grapefruit, but this version is the right amount of sweetness/tanginess.

  • 1/2 packet of Stevia
  • 1/2 Grapefruit

Sprinkle grapefruit with stevia, and place in oven/toaster oven. Broil at a high temperature for 8-10 minutes.

Calories: 41

Health benefits of grapefruit include a great source of antioxidants, lowers cholesterol, increases metabolic rate, and it’s high in fiber.

Kaeng Raeng Review

I concluded the Kaeng Raeng Detox, after completing four days. Today, I woke up and again did not have an appetite, yet had little energy to workout. I instead choose a Whole Berry Blast Pro Bar and a sliced banana with a dollop of Plain Soy Greek Yogurt and a sprinkle of Cinnamon. This breakfast/lunch combo gave me the energy to start my day and have a complete workout. It also kept me full until dinner, in which I stuck to eating healthy with sliced cucumbers and tomatoes with hummus, salad, and a couple of lemon infused vegetarian grape leaves. I drank an abundance of water throughout the day to stay hydrated.

The detox helped me achieve my goal of eliminating sugar cravings and focusing on healthy whole foods. I’m happy with the results of the detox, but the 3 Day detox would have been just right for me. Although it wasn’t difficult sticking to the detox, by day five, my body was telling me I needed energy and whole protein packed foods.

PROS: Eliminated cravings, weight loss, healthy mindset

CONS: Bloating after consuming, timely to consume, repetitive meals, lightheadedness, nausea
