Mediterranean Salad Pockets

I’m all about sticking to the 80/20 rule when it comes to nutrition. I actually crave healthy, clean foods, most of the time. Don’t get me wrong, I don’t pass up vegan pizza, donuts, or Mexican food at any given chance, (ha!) but I like to spice things up with quick, easy lunches so I don’t resort to snacking throughout the day.

These salad pita pockets are filled with yummy veggies and full of flavor!

Mediterranean Salad Pita Pockets

  • Cucumbers, sliced
  • Grape Tomatoes, sliced
  • Avocado, sliced
  • Tabouli
  • Hummus (I use Black Garlic flavor!)
  • Vegan Mozzarella (goat/feta can be used!)
  • Protein Options: Chickpeas, Lentils or Grilled Chicken
  • Cholula (optional)

Spicy Rice & Beans with Fresh Salata

One of my favorite lunch spots serves healthy Lebanese-American food. I love that they offer healthy and nutritious options on their menu like quinoa, kale, brown rice and fresh veggies. A dish I usually crave is made with well seasoned brown rice, beans, cooked vegetables, and topped with fresh Lebanese Salata. I had a serious craving for it and decided to recreate a version of my own. If you like food with a spicy kick, the mix of flavors is amazing!

Ingredients

Rice & Beans

  • 1 Cup Della Basmati Light Brown Rice, uncooked
  • 2 Cups Hot Water
  • 1 “Chicken” Bouillon Cube (I used Celifibr Gluten Free Vegetarian Chicken Bouillon)
  • 3 Cloves Garlic, minced
  • 2 Tablespoons Parsley, dried
  • 2 teaspoons Cumin
  • 1 teaspoon Tumeric
  • 1 teaspoon cayenne pepper
  • Pink Himalayan Salt, to taste
  • Fresh Ground Black Pepper, to taste
  • 1 Carton of Simply Balanced Organic Low Sodium Three Bean Blend (at Target), rinsed
  • 1/2 Cup Organic Frozen Peas

Salata:

  • 1 Organic cucumber, chopped
  • Campari Tomatoes, deseeded, chopped
  • Juice of 1 Lemon
  • 1/4 Cup Parsley
  • Granulated Garlic
  • Pink Himalayan Salt
  • Fresh Ground Black Pepper

Directions:

  1. Add bouillon cube to 2 cups hot water, mix well, and set aside to dissolve.
  2. In a large pot, on medium heat, add olive oil and garlic and cook 1-2 minutes.
  3. Stir in spices and rice and mix well, cooking for 5-7 minutes.
  4. Add bouillon water and bring to a boil.
  5. Reduce heat to low, cover and simmer for 25-30 minutes, or until water has absorbed.
  6. While Rice is cooking, chop cucumbers and tomatoes. Add to a medium bowl, and add lemon juice, parsley, granulated garlic, and salt and pepper to taste.
  7. When rice is done cooking, add frozen peas, and beans, and stir well. Let cook 5-7 minutes. Add salt and pepper to taste.
  8. Add rice & beans to your bowl and top with fresh salata. Enjoy!

*You can easily add grilled chicken to this dish, as well!

Gluten Free, Vegan Pizza

Happy National Pizza Day! Pizza is one of my biggest weaknesses and (& biggest cravings!) So I try to make it as guilt-free as possible whenever I make it myself. Gluten free/vegan crust isn’t exactly the most cooperative recipe to make most of the time. I found this recipe, which if rolled out thinly, and added flour, it has been the most successful crust recipe I’ve made thus far.

Vegan Pizza Toppings

San Marzano Tomatoes, blended in blender

Granulated Garlic

Daiya Vegan Mozzarella

Mushrooms, sliced

Fresh Basil, chopped

After following the crust recipe, and baking accordingly, I evenly spread the pureed San Marzano tomatoes to the crust by the spoonful. Next I sprinkle granulated garlic. I cover with vegan cheese shreds, then top with sliced mushrooms and fresh basil. The ingredients marry together so well for a subtle burst of flavor.

Vegan Thanksgiving Dishes

I usually make a couple vegan dishes for Thanksgiving, but ironically this is the first year I’m actually making Thanksgiving-inspired dishes, instead of my usual go-to’s. Pumpkin pie is one of my favorite desserts. I usually make a vegan, gf version for Thanksgiving, but in the meantime I’m swapping my usual ingredients for the Fall flavor. I decided to add it to one of my fave breakfasts on-the-go and the results… ah-may-zing. A quick breakfast after your workout that tastes just like pumpkin pie? Um yes please.

  • 1/2 Cup Rolled Oats
  • 3/4 Cup Unsweetened Almond Milk
  • 1/4 Cup Pumpkin Puree
  • 1 Scoop Vanilla Protein Powder
  • 1 Tablespoon Chia Seeds
  • 1 Tablespoon Almond Butter
  • 1/2 teaspoon Pumpkin Pie Spice
  • 1/2 teaspoon Cinnamon
  • Stevia (optional)

After adding all dry ingredients, seal with lid and shake well.

Next add almond milk, pumpkin puree and almond butter. Stir well, seal and refrigerate overnight. Enjoy for a protein packed breakfast that tastes just like dessert!

NYC Fave Vegan & Gluten Free Spots

One major benefit of traveling to NYC and LA is the abundance of veg and gluten free options and restaurants. I always take advantage of my fave spots and this time added some new ones to the list!

I stopped into Peacefood Cafe one morning for a Pumpkin Spice Latte and delicious GF Pumpkin Loaf. The tofu scramble is yummy, also!

Dinner at Cafe Blossom in the West Village was amazing. We shared a variety of dishes to try a little bit of everything, and it was all delicious! We tasted the Chickpea Fritters, Caesar Salad, Sunflower Burger, Berry BBQ Tempeh, Quinoa Spaghetti (which was tdf!).

I ventured to Pure Food & Wine for a prix fixe brunch, where I ordered the Caesar Salad, Tortilla Wraps and Raw Lemon Bar. The salad was great, and the lemon bar had the perfect subtle taste.

Chloe’s Soft Serve Fruit Co is the ultimate guilt-free treat. The Banana soft serve is so delicious! Topped with fresh fruit, coconut, carob chips and a gluten free waffle, it was perfection. 😉

Fresh & Co was conveniently located across from my hotel. Hot quinoa bowls and create your own salads, make for the perfect quick dinner! I tried the warm Kimchee Quinoa Stir-fry Bowl, it was yummy.

Le Pain Quotidien is one of my favorites! I adore their Quinoa Taboule Salad, but this time I opted for the Turmeric Chai Latte and Kale Caesar Salad. It was a nice change for the new season.

When craving a quick slice, Cafe Viva, offers both vegan and gluten free pizza, although Pala takes the spot as my fave.

For quick lunch takeout that’s totally green and healthy, Green Symphony has an abundance of options. I opted for the kale salad.

While in the West Village, we had dinner at S’Nice. I ordered the quinoa salad, it was full of flavor.

If you crave froyo, Tutti Frutti offers a variety of soy frozen yogurt and fresh fruit and carob toppings and it’s delicious!

A few others that I usually visit while in the city…

Babycakes NYC is the ultimate vegan, gluten free bakery. Everything is scrumptious from their doughnuts, to cupcakes, to cinnamon toasties. My birthday cake is even shipped from there every year.

Terri NYC is great for wraps, salads, fresh juices or a quick snack. Their smoothies are really yummy too, and are open early for breakfast.

Burrito Box is the ultimate Mexican fix. Their vegan options go above and beyond, and never disappoint. Great for delivery or takeout.

Blossom Du Jour is great for a quick lunch and fresh pressed juices on hand.

Two Boots is perfect when craving a big NY slice of pizza, and is conveniently located around the city.
