This simple summer dish is loaded with all the flavor, but sans the calories of a typical pasta dish. A spiral vegetable slicer is one of the best kitchen tool purchases I’ve made, creating simple salad and “noodle” dishes in just minutes.
Raw Zucchini “Pasta”
1 Large Zucchini or 2 Medium Zucchinis
1 Cup Cherry Tomatoes, halved
1 T Hemp Seeds
1 T Pine Nuts
Using a spiral vegetable slicer, spiral zucchini into “noodles.” Add tomatoes, sprinkle with hemp seeds and pine nuts, and top with fresh pesto basil and mix well.
Fresh Basil Pesto
1/3 Cup Basil
1/2 Cup Pine Nuts
2 T Olive Oil
2 T Juice from Fresh Lemon
1/2 Clove Garlic
1/2 T Nutritional Yeast (Optional)
2 T Water
Add all ingredients to Vitamix, or food processor, and blend well. Gradually add more water if consistency is too thick.
Directions: Add everything except the sugar into a large pitcher and stir well. Add sugar to taste and adjust until your desired sweetness is achieved. Chill in the fridge for at least 2 hours prior to serving (I chilled mine overnight.) Before serving, you may add some club soda & ice if desired. Taste again and add more sweetener if necessary.
This season I’ve been reaching for army green and wine colored hues, along with my usual neutrals. A pair of colored denim or an accent scarf really make my basic blacks, navys and beiges pop in a bold way.

Last week, I Instagramed my budget buys of metallic denim, each under $27. I’ve been on the lookout for a great pair of metallic denim this season. I happened to be in Target the other day, and spotted these fabulous shimmery black skinnies. The sparkling sheen gives off a coated denim look. These skinny jeans are so comfortable, I could sleep in them. Did I mention they’re under $23? Major fab find.
I’m not one for camo, but I’m loving this unexpected accent. An army green utility jacket is essential in my closet, so this hyped up version serves as a great statement item. If you dare to wear, be sure to incorporate just a single piece of the print. Anything more is taking the trend overboard. A utility jacket, skinny pant or subtle shoe is a safe bet!
