Mediterranean Salad Pockets

I’m all about sticking to the 80/20 rule when it comes to nutrition. I actually crave healthy, clean foods, most of the time. Don’t get me wrong, I don’t pass up vegan pizza, donuts, or Mexican food at any given chance, (ha!) but I like to spice things up with quick, easy lunches so I don’t resort to snacking throughout the day.

These salad pita pockets are filled with yummy veggies and full of flavor!

Mediterranean Salad Pita Pockets

  • Cucumbers, sliced
  • Grape Tomatoes, sliced
  • Avocado, sliced
  • Tabouli
  • Hummus (I use Black Garlic flavor!)
  • Vegan Mozzarella (goat/feta can be used!)
  • Protein Options: Chickpeas, Lentils or Grilled Chicken
  • Cholula (optional)

I couldn’t be more excited for Spring weather and more fresh veggies available. I like to switch up my salads frequently with a variety of proteins, veggies, healthy fats and omega-3s. I swap out everything from vegan chicken, to sunflower seeds, to beets to keep it from getting boring. Prepping veggies early in the week, make this simple, yet nutrient packed salad easy to throw together for lunch or dinner.

Start out with a base. I love fresh romaine, and I wash and cut it up early in the week so salads are easily accessible. I deseed veggies like cucumbers and tomatoes, and cut up red onion. Healthy fats like fresh avocado, walnuts and sunflower seeds keep it filling. I always add a couple protein options like garbanzo beans, tofu, tempeh or veggie chicken strips. My favorite vinaigrette is equal parts Organic Extra Virgin Olive Oil and Organic Red Wine Vinegar, mixed with Pink Himalayan Salt, Fresh Ground Black Pepper, Granulated Garlic and Oregano.

NYC Fave Vegan & Gluten Free Spots

One major benefit of traveling to NYC and LA is the abundance of veg and gluten free options and restaurants. I always take advantage of my fave spots and this time added some new ones to the list!

I stopped into Peacefood Cafe one morning for a Pumpkin Spice Latte and delicious GF Pumpkin Loaf. The tofu scramble is yummy, also!

Dinner at Cafe Blossom in the West Village was amazing. We shared a variety of dishes to try a little bit of everything, and it was all delicious! We tasted the Chickpea Fritters, Caesar Salad, Sunflower Burger, Berry BBQ Tempeh, Quinoa Spaghetti (which was tdf!).

I ventured to Pure Food & Wine for a prix fixe brunch, where I ordered the Caesar Salad, Tortilla Wraps and Raw Lemon Bar. The salad was great, and the lemon bar had the perfect subtle taste.

Chloe’s Soft Serve Fruit Co is the ultimate guilt-free treat. The Banana soft serve is so delicious! Topped with fresh fruit, coconut, carob chips and a gluten free waffle, it was perfection. 😉

Fresh & Co was conveniently located across from my hotel. Hot quinoa bowls and create your own salads, make for the perfect quick dinner! I tried the warm Kimchee Quinoa Stir-fry Bowl, it was yummy.

Le Pain Quotidien is one of my favorites! I adore their Quinoa Taboule Salad, but this time I opted for the Turmeric Chai Latte and Kale Caesar Salad. It was a nice change for the new season.

When craving a quick slice, Cafe Viva, offers both vegan and gluten free pizza, although Pala takes the spot as my fave.

For quick lunch takeout that’s totally green and healthy, Green Symphony has an abundance of options. I opted for the kale salad.

While in the West Village, we had dinner at S’Nice. I ordered the quinoa salad, it was full of flavor.

If you crave froyo, Tutti Frutti offers a variety of soy frozen yogurt and fresh fruit and carob toppings and it’s delicious!

A few others that I usually visit while in the city…

Babycakes NYC is the ultimate vegan, gluten free bakery. Everything is scrumptious from their doughnuts, to cupcakes, to cinnamon toasties. My birthday cake is even shipped from there every year.

Terri NYC is great for wraps, salads, fresh juices or a quick snack. Their smoothies are really yummy too, and are open early for breakfast.

Burrito Box is the ultimate Mexican fix. Their vegan options go above and beyond, and never disappoint. Great for delivery or takeout.

Blossom Du Jour is great for a quick lunch and fresh pressed juices on hand.

Two Boots is perfect when craving a big NY slice of pizza, and is conveniently located around the city.

Ingredients

  • 2 C Arugula
  • 1 Portobello Mushroom Cap, sliced
  • 1 Small Roma Tomato, sliced
  • 1/3 Dulse
  • 1 T Raw Pumpkin Seeds
  • 1 T Chia Seeds
  • 1 T Hemp Seeds
  • 1 T Goji Berries
  • 1 Spring of Fresh Rosemary
  • 2 t + 1 t Olive Oil
  • 1 T Apple Cider Vinegar
  • 1 T Balsamic Vinegar
  • Fresh Ground Pepper
  1. Wash and dry arugula, place in bowl. Add with tomatoes, dulse, and hemp and chia seeds.
  2. Heat 2 t olive oil in pan and sauté mushrooms with rosemary.
  3. Once mushrooms are almost fully cooked, add pumpkin seeds and goji berries and let brown.
  4. Top portobello mixture over bed of arugula and 1 t olive oil and vinegars. Mix well.

Raw “Pasta” Salad

It’s the start of Summer which means BBQs, picnics and cookouts will soon start to fill your weekend agenda. This raw “pasta” salad is a healthy option for a hot day, and loaded with flavor and antioxidants.

Ingredients:

  • Zucchini
  • Carrots
  • Jicama
  • Tomato
  • Pumpkin Seeds
  • Fresh Ground Pepper
  • Oregano
  • Basil
  • Parsley
  • Garlic, minced
  • Apple Cider Vinegar
  • Red Wine Vinegar
  • Fresh Squeezed Lemon
  • Optional: Drizzle of Olive Oil

Using a vegetable spiral slicer, slice the zucchini and carrots. Chop tomatoes and jicama. Add pumpkin seeds and spices and vinegar to taste. Mix together and serve!

Portobello Fajita Salad with Pineapple Mango Salsa

I’ve been portobello crazy lately. It’s such a great lunch or dinner (or even breakfast) staple, that compliments any flavor or theme.

I purchased Fresh Pineapple Mango Salsa on a recent trip to Whole Foods, and thought it would be the perfect pairing on top of a portobello cap. The colorful dish is a great start to Spring with a major burst of flavor.

Portobello Fajita Salad:

  • 1 Large Portobello Mushroom Cap
  • 1/3 Onion, Chopped
  • 1/2 Orange Bell Pepper, Chopped
  • 1 t Olive Oil
  • Balsamic Vinegar
  • Garlic Powder
  • Fresh Ground Pepper
  • 2 C Organic Arugula
  • 1 Roma Tomato, Chopped

Preheat oven 425 F degrees. Wash and clean portobello cap, and place on baking sheet. Scoop onion, bell pepper and fresh pineapple mango salsa on top. Sprinkle with garlic powder and fresh ground pepper, and drizzle olive oil and balsamic. Bake 10-15 minutes, or until fully cooked. Place arugula in a bowl, and add remaining ingredients. Top with fresh pineapple mango salsa and drizzle with balsamic vinegar.

Fresh Pineapple Mango Salsa

  • 1 C Mango, Diced
  • 1/2 C Red Bell Pepper, Diced
  • 1/4 C Red Onion, Diced
  • 1 C Pineapple, Diced
  • 1/2 C Fresh Cilantro
  • 1 Jalapeño Pepper, Diced
  • Garlic, Minced
  • Fresh Ground Pepper
  • Juice from 1 Lime

Toss all ingredients in a large bowl and serve.

I have a serious weakness for Mexican dishes! I put a healthy spin on your typical Taco Tuesday, minus the calories, but full of flavor. The superfood loaded dish makes it a guilt-free indulgence.

Yields 1 Entree Sized Serving

1/4 C Quinoa, dry

2 C Hearts of Romaine, chopped

1/2 C Black Beans, no-salt added or dried & cooked

1/4 Avocado, sliced

1 Roma Tomato, diced

1 T Salsa

Juice of Fresh Lime

Wow-A-Chihuahua (Whole Foods) or your own blend of cumin, cayenne, garlic, chili, cilantro, onion & red pepper

Fresh Cilantro

  • Place quinoa in a pot with 1/2 C water, and bring to a boil.
  • Once boiling, cover and let simmer, until the water is absorbed.
  • Once quinoa is finished cooking, mix in Mexican Seasoning and lime juice, and stir well.
  • Chop romaine and place in a bowl.
  • Scoop the seasoned quinoa onto the greens.
  • Add the remaining ingredients, and top with salsa.

2-3 Small Organic Corn Tortillas

1/4 Avocado, Chopped

1 Small Roma Tomato, Chopped

1-2 T Daiya Pepper Jack

2 t Wow A Chihuahua

Juice of 1/2 Fresh Lime

Layer ingredients on tortillas, and bake in toaster oven until cheese is melted.

Enjoy!

Friday Finds

This year is flying by so quickly. I can’t believe it is already the beginning of March. I’m ready for change, warm weather and all the bright refreshing aspects of Spring.Butter London

Once a month, I like to do a green juice detox to stay healthy and be refreshed. Pressed Juicery has the best juices and homemade nut milks, making it something to look forward to.
