Chocolate Vanilla Bean Espresso Almond Butter Shakeology Ice Cream

1 Scoop Vegan Chocolate Shakeology

1 frozen Banana, sliced into chunks

1/4 Cup Unsweetened Vanilla Almond Milk

1 Tbsp Vanilla Bean Espresso Almond Butter

Place almond milk, banana, shakeology, and almond butter in blender or food processor and blend until smooth. Top with your favorite nuts or coconut shreds.

Fruit Topped Chia Seed Pudding

Shakeology nixes a lot of my sweets cravings, but this refreshing “dessert” is actually packed with health benefits. Chia seeds are high in antioxidants, protein, omega 3’s, dietary fiber and vitamins and minerals. This means they help with keeping skin looking young, aid in digestive health, promote heart health, boost your metabolism, and promote muscle building and weight loss.

It makes a great “treat” for breakfast, snack or dessert, and fits into the 21 Day Fix meal plan. How cute are these footed dessert dishes?

21 Day Fix Approved Chia Seed Pudding

4 oz Unsweetened Vanilla Almond Milk

2 Tbsp Chia Seeds

1 Tbsp Rolled Oats

1 Drop Vanilla Creme Stevia (optional)

Mango, Strawberries, Blueberries (or fruit of choice)

Add chia seeds, oats, almond milk, and stevia (optional) to bowl. Mix well. Let sit overnight (for best consistency.) Add fresh or frozen fruit of choice. Enjoy!

1 Orange | 1 Yellow | 1 Purple (depending on the amount of fruit added)

Starting Over

  

In December 2012, I was preparing for my best friend’s wedding. I stuck to doing my at home workouts by running on the treadmill and a few toning exercises and sticking to my antioxidant filled vegan, gluten-free diet. No cheat days, just sticking to my strict regimen. A month prior I had also started a new birth control pill, being that the one I was on prior to that was highly publicized for to risk of blood clots. On vacation at the end of December, I noticed a change in my body. I had stuck to my normal healthy meals during the holidays so it couldn’t have been holiday bloat. So I started on a more intense meal plan and added spinning to my exercise regimen 6 days per week. 

From December to February I had gained 20 pounds. I was devastated and could not figure out the reason why, even going to the doctor and getting tests ran without any answers. Finally, in May I had realized the only thing that had changed was the pill that I switched to. I then started to Google, finding horror stories of rapid weight gain in small time spans and became horrified that I had been taking it for the previous 8 months. I immediately stopped and so did the weight gain… But after trying everything imaginable with diet and exercise nothing would take it off. After a year of working out intensely and sticking to a strict diet and nothing happening I gave up. I started adapting my then fiancé’s l, now husband’s last night dinner habits because of his work schedule and began indulging in whatever vegan foods sounded good without any portion control. Over the course of another year I eventually gained 15 more pounds, making me completely miserable and effecting every part of my life. I stopped the thing I was most passionate about, my blog. 

I no longer could take a mass amount of photos to create style posts without cringing. I refused to buy clothes in a new size because I didn’t want to get “comfortable” looking the way I did, so I resorted to Lululemon leggings and oversized sweaters (you know that is not my “style.”) 

I tried doing “low carb” or “no starches” but it would only last a couple days and I would be starving. In July 2014, I decided to purchase the 21 Day Fix and Shakeology. I loved the meal plan but never decided to get serious and go full force until January 5, 2015. In the first 21 days, I saw an enormous difference in everything from the way my body looked, to the way I felt. I had so much more energy, I was always full, and ate a variety of nutrients each day with recipes that were actually delicious. 

From the first round, I kept going. This became a lifestyle. It taught me how to eat, what to eat and how much of it. All of the tools I needed to know exactly what my body required, and one 30 minute workout per day. 

Prior to this I was eating less (but not so healthy foods) and working out more, I would have never imagined eating more and working out less would actually be the solution to losing weight and getting fit again. After the first round I didn’t see any pounds lost again for a while, I assumed I was just maintaining at this point, until I tried on dresses in April for a trip to Florida, that I had previously tried on in February for a trip to Las Vegas that at the time didn’t fit, I was amazed at the difference in how great they fit now without losing actual “pounds.” The entire time I had been losing inches and gaining muscle. Non-scale victories are much more beneficial! They tell you way more than the scale.

 This program changed my life in so many ways. I’ve gained more confidence in feeling like myself again, being able to wear all of my old skinny jeans and clothes again is the best feeling ever, feeling fit and not bloated is amazing and I was able to go down two sizes in my wedding dress from the time I purchased it until my first fitting. A week into the program I decided to start coaching and creating challenge groups with recipes, meal plans and grocery lists for groups of people wanting to get healthy and change their lives. I’ve always had a passion for fitness and nutrition, as I always posted recipes and health benefits of my favorite foods on here, but it made me so happy to be able to use that passion and help others who were in the same position I was once in. I’ve helped so many family members and friends (including my husband who loved junk food and now is obsessed with Vegan Chocolate Shakeology.) 

A revamp of The Subtle Statement was much needed to start over, now that I’ve started over and I’ve gained back everything to continue my passion of my blog again. It was never easy to share my story and why I stopped posting, but now the most important thing is knowing that someone else may be in the shoes I was in and this post may be a life changer for them too. A lot has happened since my last post. I took my passion of sharing recipes, nutrition and fitness and became a health and fitness coach, we moved into a new house, and I got married! Now that things have settled down, I’m back and combining my usual healthy recipes, along with beauty, home decor, and fashion relating it more to my current life as a lifestyle blog. Detox Lemonade

  • 3 Lemons
  • 10 Shakes Cayenne Pepper
  • 1 Packet SweetLeaf Stevia
  • 1 Pitcher Purified Water

Slice one lemon, thinly and add to pitcher. Cut the remaining two lemons in half and squeeze juice from all four pieces into pitcher. Add packet of Stevia, and Cayenne Pepper. Fill pitcher with water. Refrigerate.  Enjoy 🙂

Pumpkin pie is one of my favorite desserts. I usually make a vegan, gf version for Thanksgiving, but in the meantime I’m swapping my usual ingredients for the Fall flavor. I decided to add it to one of my fave breakfasts on-the-go and the results… ah-may-zing. A quick breakfast after your workout that tastes just like pumpkin pie? Um yes please.

  • 1/2 Cup Rolled Oats
  • 3/4 Cup Unsweetened Almond Milk
  • 1/4 Cup Pumpkin Puree
  • 1 Scoop Vanilla Protein Powder
  • 1 Tablespoon Chia Seeds
  • 1 Tablespoon Almond Butter
  • 1/2 teaspoon Pumpkin Pie Spice
  • 1/2 teaspoon Cinnamon
  • Stevia (optional)

After adding all dry ingredients, seal with lid and shake well.
