Strawberry Shortcake Push Pops

Strawberry Shortcake Push Pops are a simple dessert to throw together and the accessible containers are great for any picnic or BBQ.

  • 1 – 16.25 ounce box white cake mix (as well as  ingredients to bake)
  • 1 – 8 ounce container COOL WHIP whipped topping
  • 1 pound fresh strawberries – sliced

Preheat oven to 350 degrees. Spray mini whoopie pie pans with non-stick cooking spray.   Mix cake batter according to directions, and fill pie pans 1/2 full with batter. Bake 10 minutes, or until toothpick comes out clean. Let cool completely.

Place a mini shortcake in each push pop container.

Using a pastry bag, pipe cool whip on top of each mini shortcake.

Layer with sliced strawberries.

Layer another mini shortcake on top of strawberry slices.

Pipe another layer of cool whip, and top with strawberry slices. Seal with lid and refrigerate to stay fresh!

I was looking to brighten up the sweet-themed Hummingbird Cake I made for Mother’s Day/Birthday. I searched for supplies on hand and came up with bright hued scrapbooking flowers and always festive striped straws. A day-brightening daisy-themed cake topper was the perfect puzzle piece, complete in under 15 minutes.

Materials:

  • 3 Striped Straws
  • Scrapbooking Flowers
  • Coordinating Brads
  • Baker’s Twine
  • Hot Glue Gun
  • Punched Out Cardstock Circles

Place flowers together and secure with coordinating brads.

Tie baker’s twine around one end of a straw and hot glue the knot to secure.

Using a hot glue gun, dab the glue in the middle of the back of the first flower and place the baker’s twine directly through it.

Apply a second dab of glue over the baker’s twine and place a piece of cardstock circle over it.

Continue to do the same for the remaining flowers.

Once finished, tie the end of the baker’s twine to another straw, and hot glue.

Glue a straight line directly in the middle of back of the flowers, and place the remaining straw across.

Turn over, and hot glue one petal of the two outter flowers to each straw to secure.

I love baking, but I love baking for birthdays even more. I have always loved rose decorated cakes, and decided to try a neapolitan version that I saw on I Am Baker.

Visit I Am Baker for her talented techniques. (A first timer still ranks me amateur status.) I’m hoping to improve, since I plan on making this my Spring celebration staple.. (thinking yellow, pink & purple possibilities!)

Camo Cupcakes

While baking, I’m usually as girlie chic as it goes. But when it came to baking something for my best friend’s husband’s birthday party, I had to think outside “jewelry” box. I found this fun camo cupcake recipe from Crafty Mama, and decided would be perfect!

Separate one white cake mix into four different bowls, and color accordingly. I use gel food coloring for all my baking needs. It works much better than the liquid form for cakes, cookies, and icings.

Fill pastry bags, or ziplock bags (which I used because it was much less messy, while using multiple colors) with each of the colored cake mixes.

Pipe a dollop of each color into two cupcake pans evenly. Bake according to recipe instructions.

Instead of making one large cake, I liked the idea of simply making a “24” shape out of the decorative cupcakes.

Instead of going full-out camo, I opted for a Creamy Chocolate Icing to frost the cupcakes.

**To veganize this recipe, start with a making a batch of vegan cupcakes and substituting all natural food coloring.
